Recent human studies indicate that the fewer carbohydrates one eats, the lower the risk of death from all causes. Because they have a short lifespan (about 14-15 days), they are a good model organism for aging research. Strains are inexpensive to breed and can be frozen. When subsequently thawed, they remain viable, allowing long-term storage.
